The sauce players (in order of appearance) Garlic, Onions, Stewed Tomatoes, Kalamata Olives, Fresh Basil....
The chicken breast gets hammered, egg washed, bread crumbs and a spell in a hot skillet. Then on to the baking dish, topped with sauce, mozzarella, basil and parmesan. About 30 minutes later.....
The real secret here is....the Kalamata Olives.

**Berries**
Stopped off at Avila Valley Barn on the way home from SLO today and picked up some fresh berries. Natti LOVES berries, so do I!
Berry buying rule #1: Don't buy berries in the grocery store if you have a farmer's market nearby. They cost more and are NEVER as sweet and full of flavor. These berries are awesome!

Linguini (or Spaghetti) with shrimp........
Saute minced garlic (be generous here, we used 5 big cloves) in butter and olive oil...
Add the deveined shrimp and cook until it is just pink, add the zest of one lemon, then dump in the linguini (we used spaghetti this time because we didn't have linguini). Squeeze in the juice from that lemon, add freshly grated Parmigianno Reggiano and chopped Italian parsley.
Top it off with some fresh cracked black pepper, even more Parmigianno Reggiano and enjoy!
This dish is an excellent choice for hot summer nights.
Good food doesn't have to be expensive or difficult to cook!!

Tomato and Goat Cheese Tarts
I know these little gems have shown up on FB before, but now you can see how it's done........
Roll out the puff pastry.......
Add parmagiano reggiano, caramelized onions, goat cheese and a slice of tomato.......
a little splash of olive oil, more parmagiano reggiano and fresh basil.
Pop it in the oven, wait 25 minutes and enjoy!!
